#20 In Progress - Try 1 New Recipe Every Month For 1 Year

On Monday I made Stuffed Chicken Breast for the first time. It took me a while looking at allrecipes.com to try and find a recipe with ingredients that I actually have here...in the end I couldn't fine one so I had to take ideas from a bunch of different ones. Here is what I came up with:
2 Chicken Breasts - since I didn't have a meat tenderizer I actually had to punch them to flatten them
1/2 of a Fuji Apple - chopped
A little bit of onion - chopped
1 garlic clove - pressed or minced
Cheddar Cheese Grated (I think mozzarella would have been yummy too!)
some balsamic vinaigrette dressing
olive oil

Mix together everything except for chicken
Put some of the mix into the middle of each chicken and roll chicken. If you have a toothpick use that to keep chicken from rolling apart...I didn't so I just had to hope it wouldn't.
Cover the top of the chicken with the remaining mixture. To make it extra pretty thinly slice part of remaining apple and put 3 slices on each chicken.

My oven is a little funny it has numbers 1-7 on it and I only keep it on #1 so I don't really know how high it was...I would say 350-400 degrees  until chicken is no longer pink and the cheese is all melty goodness! Enjoy!

Steve sure did...he asked if I would remember exactly how I made it so that I can make it again. In his words, "I think this is a new favorite!" Maybe it will be yours too!

95. Throw a surprise party for someone




Yesterday, my friend, Amanda, and I threw a Surprise Bridal Shower for our good friend, Becky. It was so much fun! We scrapbooked a cookbook and made a ribbon photo board to give to her for her bridal shower. The Bridal Shower was held at the cutest restaurant in all of Lippo. It is a small Thai food restaurant but the owner did a brunch American selection for us with pancakes, french toast, scones, and finger sandwiches.

Now...Amanda, Becky, and I all live on the same floor of our apartment building and spend most of our days together while our hubbies are at work. Throwing this party proved to be a little difficult as Amanda and I snuck around trying to not be seen or heard by Becky or her sweet hubby while working on the party. 

The expression on Becky's face as we walked into the restaurant where all of our friends were waiting was priceless. She just kept on saying "Why are they here taking my picture?"




It wasn't until Amanda and I told her, "This is your Surprise Bridal Shower" that it hit and the look of surprise was evident on her face. :) Becky and Ben have been married for 10 weeks today so this was actually a post-wedding shower. They moved to Indonesia only 5 days after their wedding!!!! Because of this we wanted a special time where Becky could "relive" her wedding by looking at some pictures and telling some of things that had happened on her special day.





My husband kept saying it was so sweet of me to throw this party but in all reality I don't know who enjoyed the surprise more, me or Becky. Throwing it gave me a sense of purpose and let me use some of the abilities and gifts that the Lord has blessed me with. It also let me check off an item on my Day Zero list for the first time. Yay!!!
